 cs\, the study of the interaction of photons with atoms\, has made revolut
 ionary progress in the last 60 years\, providing\, at the same time\, adva
 nces in fundamental science as well as applied science and technology.  P
 hotons also interact with nuclei and it is natural to ask whether a simila
 r revolution\, deeper inside matter\, is possible.  Indeed\, the ability 
 to perform high resolution nuclear spectroscopy was discovered by Moessbau
 er a few years before the invention of the laser!  In this talk\, I will 
 review some aspects of what I like to call "Nuclear Quantum Optics" and de
 scribe some new experiments using these phenomena to investigate fundament
