Quantum Optics, the study of the interaction of photons with atoms, has made revolutionary progress in the last 60 years, providing, at the same time, advances in fundamental science as well as applied science and technology. Photons also interact with nuclei and it is natural to ask whether a similar revolution, deeper inside matter, is possible. Indeed, the ability to perform high resolution nuclear spectroscopy was discovered by Moessbauer a few years before the invention of the laser! In this talk, I will review some aspects of what I like to call "Nuclear Quantum Optics" and describe some new experiments using these phenomena to investigate fundamental physics.
